Last year we got over 200 lbs of potatoes from our garden. Haven't harvested yet this year but we doubled the size of the patch so I expect big things. Potatoes are a very nutritious and versatile food. I plan on helping family survive and offering them to others that show up at our door hungry. Have even purchased small paper bags with that idea in mind. I may not have TP but I won't starve.
Last year maybe 10x15? This year we expanded to about 15x20? Idk exactly but this year it was about 180 plants I planted in rows 1 ft apart. Basically I just stick a shovel in the ground like I'm going to dig a hole, drop the potatie section in and remove the shovel, letting the soil fall back in place. I step on it as I move to the next hole. Once they are up and the lower leaves are about 6-8 inches above the soil I mound straw around the plant. I kinda pack it down so no light gets to the soil. I keep an eye throughout the season and add more straw if needed. The straw feeds the soil, keeps the ground moist and makes them easy to dig. If and when the potatoes get beetles I dust with an organic deterrent. I also add bone meal a couple times a season.
No, it doesn't cause any issues. It is important to feed your soil. We do it organically. We have what we call a worm bed where we throw our organic waste. Every thing from the kitchen and yard goes in it and is broken down over time, creating a rich compst that we put on the bed. Plus the straw decomposes in place. Every once in a while we add manure and bone meal. Really we should do that more often.
As for bugs you have them no matter what you do. I swear there is a hot line telling all the bugs with in miles. You have to deal with them with anything you grow.

We have to begin recognizing the difference between things we believe and things we know.

Ultimately, that's unhelpful. There's nothing wrong with having that belief, or that conviction, particularly if it is based on various data points comprising different forms of evidence, but the minute you start acting as if you know that its the case, when in fact its a belief, then you begin to set yourself up and others up for a boom/bust cycle.
IMO, it's better to be clear about the possibilities, describe what you think it means and what you believe it means, but to also recognize that belief is not the same as knowledge.
This is called intellectual honesty, and it makes both your beliefs, and your thinking and reasoning, more robust. It's a win-win.

Grated potatoes wrapped in cloth also make a good poultice to place over sore areas on the body.
